Evergreen trees and shrubs, including species of spruce, pine, fir, juniper, hemlock (not to be confused with poison hemlock!), redwoods, and cedar, have long provided Indigenous peoples with medicine. Their needles or leaves, as well as cones and sometimes berries, can bring their beautiful fragrance to cooking, too. In the spring, many conifers push out new growth at the tips, which are exceptionally tender and flavourful.
