Infinite Fragrance: Robertet is bringing its fragrance expertise to the dinner table.

Peter Kim, founder of The Infinite Table — a new immersive dining company that fuses 360-degree video and food — worked with sensory adviser Paul Austin to explore scent as one way of transporting diners to Oaxaca, Mexico, for its debut experience “Oaxaca: Tierra y Tiempo” in New York City.

To bring the project to life, they tapped perfumers Patricia Bilodeau and Elena Valdivieso-Ruiz from fragrance and flavor house Robertet to create three original scent expressions: sun/maíz, fire/agave and forest/cacao.

The choreography is as important as the scents themselves, according to Austin. Each enters the room at a precise point in the story, with its timing, intensity and duration considered in relation to what guests are seeing, hearing and tasting.

“The precision really matters: what you smell, when it enters, its intensity and how long it stays. When all of those things come together, scent can become part of the narrative itself and help an experience stay with you,” he said.

As part of the experience, guests are seated at communal tables as the story of each dish unfolds, projected on the walls around them. When a dish appears on screen, it arrives at the table.

“Oaxaca: Tierra y Tiempo” will be a monthlong residency starting Oct. 2 and presented at artXnyc in the Meatpacking District. Tickets start at $95 for a three-course lunch and $139 for a five-course dinner.

After New York, The Infinite Table will bring “Oaxaca: Tierra y Tiempo” and future chapters to Los Angeles, Chicago, and additional cities across the U.S.
